Vegetable Soup

Ingredients

PREPARATION

  • 3 cups Vegetables like Acorn squash (1/2 cup), Turnip (1/2 cup), Carrots (1/2 cup), Red pepper (1/2 cup), Tomatoes (1 cup)
  • 1 tbsp Prana Kitchens Chukku KashAya powder
  • 1/2 tsp Prana Kitchens Utsava Spice Blend
  • Salt to taste
  • 1/4 tsp turmeric powder
  • 1 tbsp organic jaggery shavings
  • Optional ½ cup plant-based milk like Almond milk or Oat milk.
  • Optional 2 tbsp overnight soaked nuts of choice

  • Add all the vegetables in a heavy bottom pan.
  • Add boiling hot water to cover the vegetables.
  • Add turmeric and salt
  • Cook until the vegetables are tender
  • Add Prana Kitchens Chukku KashAya and Utsava Spice Blend.
  • Cook for another 5 minutes
  • Blend everything with Jaggery shavings, plant based milk or soaked nuts.
  • Soup is ready to be served.
  • Garnish with Cilantro or fresh Basil.


Ready in 10 - 12 minutes

Serves 2 people

You can make this soup with other vegetables like red cabbage, Pablano peppers, Zucchini, Yellow Squash, etc.
