Utsav Mixed Vegetable Kurma

Ingredients

PREPARATION

  • 2 small potatoes 1" cubed
  • 1 carrot peeled & 1" cubed
  • 1/2 cup beans cut into 1" slices
  • 1/2 cup frozen peas
  • 1/4 cup cashews soaked for 30 mts
  • 2 small tomatoes
  • 2 tbsp Prana Kitchens Utsava Spice Blend
  • 1 tsp Prana Kitchens SRS Turmeric
  • 2 tbsp coconut oil
  • 1/4 cup of chopped cilantro
  • Salt to taste

  • Blend tomatoes, soaked cashews and Prana Kitchens Utsava Spice into a smooth paste
  • Heat coconut oil in a heavy-bottomed pot.Add the chopped vegetables and sauté for 5-6 minutes until partially cooked.
  • Add turmeric, salt and the gravy paste to the vegetables and simmer on low heat for an additional 6-8 minutes. Add 1/4 cup water if needed
  • Remove from heat once vegetables are cooked (not mushy) and garnish with chopped cilantro
  • Enjoy the kurma with Prana Kitchens Moringa Rice Adai, chapatis or just cooked wild rice
