Utsav Spiced Kathi Rolls

Ingredients

  • 2 cups of boiled potatoes when mashed
  • 1/2 cup chopped green bell pepper (or any color of your choice)
  • 3 tbsp Prana Kitchens Utsava Spice Blend
  • 1 tsp cumin seeds (optional)
  • Salt to taste
  • Oil to season
  • 1/2 lemon
  • Chopped cilantro
  • 1 packet vegan cheese (or regular cheese if you prefer that)
  • Uncooked whole wheat tortillas or any pastry sheets.

PREPARATION

  • Preheat the oven to 375 F & line a baking tray with parchment paper.
  • Boil potatoes, peel, then mash
  • For the stuffing:
    • In a pan, heat up some oil.
    • Add cumin (optional)
    • Then add the bell pepper, turmeric, Prana Kitchens’ Utsava Spice Blend, salt, and sautĂ© it for 5 minutes. When it becomes a bit translucent add the boiled potatoes.
    • Mix it very well and keep for another 2 minutes.
    • Turn off the heat.
    • Add lemon and chopped cilantro
  • Take an uncooked wheat tortilla.
  • Add 2 tbsps of the grated cheese and 2 tbsps of the stuffing.
  • Spread it onto the tortilla and roll it like you would for a soft burrito.
  • Repeat the rolling process. There should be enough for about 10 rolls.
  • Now place them on the tray and bake for about 10-15 minutes first depending on the kind of oven you are using.
  • Flip the rolls and bake for another 10-15 minutes until you have a golden brown crisp roll. The timings depend on the oven, so please make sure you check your rolls frequently.
  • Remove the tray from the oven, and now you have crispy kathi rolls to enjoy!
