Chia Oatmeal Cookies

Ingredients

PREPARATION

DRY

  • 100 grams regular flour
  • 1 tsp Prana Kitchens Chai Masala
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 tsp baking soda/powder

WET

  • 2 tbsp aquafaba or flax meal
  • 5 tbsp room temperature water
  • 1/4 cup neutral oil melted
  • 1/2 cup coconut sugar or cane sugar
  • 1 tsp vanilla extract

TO MIX

  • 1/2 cup chia seeds
  • 1/2 cup rolled oats

  • Preheat oven to 350F
  • In a bowl mix all the wet ingredients together until combined. Now add the Dry ingredients to the bowl and gently mix in until well incorporated
  • Add the chia seeds & rolled oats in the end and mix. (This mix can be rolled onto parchment & frozen for later use. Thaw at room temperature for 30 mts before baking)
  • On a parchment lined tray, scoop out the cookie dough using a spoon or a scoop and lay on the tray about 1" apart.
  • Bake for 10 mts. The bottom will have browned, but the cookie will still be soft
  • Cool on rack for 30 mts and enjoy
